Head Barista

Gem Lee began their journey in the service industry after graduating from Western Washington University in 2019 with a BA in Human Services. Early roles as a custodian, doorman, and food runner in Bellingham, WA — paired with a background in student leadership and community work — sparked a love for collaboration, creativity, and building something meaningful with others.

A lifelong learner and avid coffee drinker, Gem started their barista career at Saint Bread, a Japanese-Scandinavian bakery and café in Seattle, in 2021. They quickly fell in love with the detail, craft, and performance of the role, becoming Lead Barista in 2022 and helping shape the café’s beverage program and front-of-house standards.

After moving to Philadelphia in 2024, Gem discovered Mighty Bread Co. and immediately felt at home. The dedication, warmth, and passion of the team reminded them of what they loved most about coffee and hospitality. As they settled into the café, Gem naturally began supporting barista training and elevating the structure and creativity of the coffee program.

Now as Head Barista, Gem is most passionate about mentoring their teammates, strengthening technical skills, and bringing creativity and precision to beverage development. They love being a barista for the same reason they love hospitality itself: the joy of creating something beautiful and delicious — and sharing it with people.
