Café Manager

Gionna Shields has been working in restaurants since she was 15, starting out at a local spot near her hometown in South Jersey. Over the years, she built her career in hospitality from the ground up, eventually becoming General Manager at Ember & Ash in South Philadelphia. 

From her first job to her leadership roles, she’s always been drawn to the energy of a busy dining room and the connections made across the table — the chance to make people feel seen, cared for, and celebrated. Whether it’s a birthday dinner, a Sunday meal with family, or a cozy breakfast at a neighborhood café, she believes food and drink have a special way of bringing people together — something she hopes to continue sharing when she one day opens her own coffee shop.

What first drew Gionna to Mighty Bread Co. was its warmth and consistency. “I used to stop by for lunch before my shifts and was always impressed by how efficient and genuinely happy the team was,” she recalls. “Even the delivery drivers who dropped off bread at my previous job were so friendly and upbeat.” When a position opened at the café, joining the team felt like an easy decision — a chance to be part of a place that embodies everything she loves about this industry.

Today, as Café Manager, Gionna leads with kindness, calm, and care — shaping guests’ days from the very start through simple acts of connection and great food.
