Billie Rushe began baking eight years ago as a pastry assistant at a café and catering company in Brooklyn. She grew up baking at home, and what started as a personal passion quickly evolved into a professional calling. In New York, she went on to work at Smith Canteen in Carroll Gardens, Roberta’s Bakery in Bushwick, and Runner & Stone as well as Bakery Four in Denver.
Billie studied environmental science in college and has long been interested in urban farming, sustainability, and local food systems — values that continue to shape her work. After moving from Brooklyn to Philadelphia two years ago, she joined Mighty Bread Co., where she is the the production manager for the bread team. For Billie, baking is both craft and connection — and a deep belief that food brings people together.
